Soft-shell Crab is farmed and is a culinary term for crabs that have recently molted their old exoskeleton and are still soft.
The crabs are considered a delicacy in many cultures. The preparation of soft-shells is very similar to that of hard-shells with one exception: the crab must be completely thawed before cooking in the fridge.
Thawing them can be accomplished by leaving in the fridge overnight.
